Diet gingerbread

The gingerbread recipe is not only an essential part of the festive atmosphere, but also a nutritious and delicious dessert that brings joy to everyone at the table. Ingredients such as whole-grain spelt flour, spices—for example, cinnamon, ginger and cloves —as well as erythritolnot only enrich the flavor but may also have beneficial effects. The spices contain natural antioxidants and may support digestion, while healthy fatsuch as coconut oil helps provide longer-lasting energy. You can also use a little gingerbread spice mix for a more intense flavor.

Ingredients

2 1/2 cups whole-wheat spelt flour
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup coconut oil (melted)
1 large egg (or 1 tablespoon ground flaxseed + 3 tablespoons water if you want a vegan version)
1 teaspoon vanilla extract
1/4 cup erythritol
1–2 tablespoons plant-based milk

Preparation

Preparation:
Preheat the oven to 180°C and line a baking tray with parchment paper.

Dry ingredients:
In a large bowl, mix the flour, cinnamon, ginger, cloves, baking soda, and salt.

Wet ingredients:
In another bowl, mix the melted coconut oil, egg (or flaxseed substitute), vanilla extract, and erythritol.

Assembling the dough:
Pour the wet ingredients into the dry ingredients and mix well. If the dough is too dry, add 1–2 tablespoons of plant-based milk.

Shaping:
Roll out the dough to about 0.5 cm thick and cut out gingerbread shapes.

Baking:
Bake the cookies for 8–10 minutes, or until lightly golden brown. Let them cool completely so they become crispier.
