Healthy pancakes

The whole-wheat spelt flour pancake is the best alternative to the old pancake recipe. It is not only delicious but also extremely nutritious. Spelt flour is rich in fiber, which supports digestion and helps stabilize blood sugar levels. It is also an important source of B vitamins, which play a role in metabolic processes and energy production. Coconut oil provides healthy fats that contribute to heart healthwhile providing lasting energy. Coconut sugar naturally has a lower glycemic index than regular sugar, so it raises blood sugar levels less. Ingredients

1 cup whole-grain spelt flour
1 1/4 cups almond milk (or another plant-based milk)
2 large eggs
1 tablespoon coconut oil (melted)
1 tablespoon coconut sugar (optional, if you want sweeter pancakes)
1/2 teaspoon baking powder
A pinch of salt
1 teaspoon vanilla extract (optional)
2 tablespoons vanilla pudding powder
300 ml almond milk (or another plant-based milk)
1–2 tablespoons coconut sugar (to taste)

Preparation

1. Step

In a large bowl, mix together the whole-grain spelt flour, baking powder, and a pinch of salt. In another bowl, beat the eggs, then add the almond milk, coconut oil, coconut sugar, and vanilla extract.

2. Step

Pour the wet ingredients into the dry ingredients and mix the batter until smooth. Let it rest for 5–10 minutes so the flour can absorb the liquid and the batter can thicken slightly.

3. Step

Heat a pancake pan over medium heat and lightly grease it with melted coconut oil. Pour a small ladleful of batter into the pan and swirl it so the batter spreads evenly. When bubbles appear on the surface of the pancake, flip it and cook the other side until golden brown. Repeat until all the batter has been used.

4. Step

Mix the vanilla pudding powder with a little almond milk until smooth. Bring the remaining almond milk to a boil in a saucepan, then add the pudding mixture and coconut sugar. Cook, stirring constantly, until the pudding thickens. Remove from the heat and let it cool.
