Ingredients (for 1 liter)

For the base ferment:

  • 3 tbsp water kefir grains
  • 1 liter filtered water
  • 3 tbsp cane sugar (needed for fermentation)

For flavoring – according to the season:

  • 2–3 cm fresh ginger, sliced or grated
  • 1 cup seasonal fruit, diced
  • 1 tsp fresh lemon juice (optional)

What fruit should you use?

Depending on the season, for example:

Spring:

  • strawberries
  • rhubarb

Summer:

  • cantaloupe
  • peach
  • raspberries

Autumn:

  • pear
  • plum
  • apple

Winter:

  • orange
  • pomegranate
  • frozen berries

Choosing seasonal produce is not only more sustainable, but can also provide a more intense flavor experience.

Preparation:

1) Dissolve the sugar in the water, add the kefir grains, and ferment for 24 hours.

2) Strain.
3) Add the ginger and seasonal fruit, seal, and let mature for 12–24 hours.
4) Chill, then strain.

Tip: Grated ginger produces a more intense flavor, while sliced ginger gives a milder taste.
