Halloween cookies

Zsófi

Halloween cookies are an essential part of the festive table. These crunchy peanut butter cookies are not only delicious but also a nutrient-rich choice for those with a sweet tooth. The creamy texture of peanut butter provides the body with healthy fats that support heart health, and provide long-lasting energy . Whole-grain spelt flour adds extra fiber and vitamins to the cookies, which contribute to balanced digestion and stable blood sugar levels. Coconut sugar offers natural sweetness, while its lower glycemic index helps avoid sudden fluctuations in blood sugar levels. Together, these ingredients create a delicious and mindful dessert that is the perfect snack at any time of day.

Difficulty: Easy
Prep Time: 8–10 minutes
Allergens: Gluten-free

Ingredients

150 g peanut butter
80 g coconut sugar
1 egg
1 teaspoon vanilla extract
50 g whole-wheat spelt flour
1/4 teaspoon baking powder
12 peanut butter cups
1/4 cup cocoa butter chips (for the eyes)
1/4 cup dark chocolate chips (for the eyes) + extra dark chocolate for the legs

Instructions

1. Step

Preheat the oven to 180°C and line a baking tray with parchment paper.

In a bowl, mix the peanut butter, coconut sugar, egg, vanilla extract, spelt flour, and baking powder until you have a smooth dough.

Spoon out small portions and shape them into flat, thin cookies.

Bake them for 8–10 minutes, until golden brown. Let them cool completely so they become crisp.

2. Step

Melt the dark chocolate over a double boiler or in the microwave.

Place a little melted chocolate in the center of each cookie, then place the peanut butter cup upside down on top.

Attach the white and dark chocolate candies as eyes, and make the “legs” with melted chocolate.

3. Step

Let them set, and enjoy the spider cookies! They can be stored at room temperature for 5–6 days.
