Homemade Lavender Syrup – A Fragrant Summer Refreshment Made Easy

Timi

Homemade lavender syrup is a true summer specialty: a delicately floral, fresh, elegant drink that you can quickly turn into a refreshing lemonade by serving it with sparkling water, lemon slices, and plenty of ice. If you enjoy natural flavors and like making simple, seasonal treats at home, this lavender syrup recipe is an excellent choice for warmer days.

Because lavender has a distinctive aroma, it is best to use it sparingly: a small amount is enough to create a pleasant, fragrant syrup. The recipe can be made with regular sugar, or you can try a sugar-free version with erythritol or another sweetener suitable for cooking.

Instructions

Ingredients

For approx. 7–8 dl of syrup:

  • 2 tablespoons dried, food-grade lavender flowers
  • 5 dl water
  • 40 dkg sugar or an equivalent amount of sweetener
  • Juice of 1 organic lemon
  • 3–4 slices of organic lemon
  • 1 teaspoon citric acid, optional
  • A few fresh mint leaves for serving, optional

Preparation

  1. Bring the water to a boil, then remove it from the heat. Add the dried lavender flowers and lemon slices.
  2. Cover and let steep for 15–20 minutes. It is not advisable to steep it any longer, as the lavender flavor may become too intense and slightly perfumed.
  3. Strain the fragrant lavender infusion through a fine-mesh strainer or cheesecloth.
  4. Pour the liquid back into a saucepan, add the sugar or sweetener, and heat over low heat until completely dissolved.
  5. Stir in the freshly squeezed lemon juice and citric acid, then boil for 2–3 minutes.
  6. Pour into a clean, sterilized bottle, seal, and leave to cool.

Serving suggestion

Place ice in a large glass, pour in 2–3 tablespoons of lavender syrup, then dilute with cold water or sparkling water. Add a lemon slice, mint leaves, and perhaps a few blueberries or raspberries—for a drink that is not only delicious but also a truly attractive summer refreshment.

Sugar-free version

To make sugar-free lavender syrup, use a sweetener that is heat-stable and dissolves well in drinks. It is important to note that sugar not only sweetens but also acts as a preservative, so the sugar-free version should be stored in the refrigerator and consumed within a few days.

Tip

Lavender syrup tastes most harmonious when it is not consumed too concentrated. Start with a small amount, then add more to taste. It is excellent in lemonade, iced tea, and non-alcoholic cocktails, and can also be used to flavor desserts such as panna cotta, ice cream, or fruit salad.

Storage

Traditional sugar-based syrup can be stored in a clean, sealed bottle in a cool place for several weeks. Once opened, be sure to refrigerate it and consume it within a short time.

Why do we love it?

Because it is simple, fragrant, special, and easy to vary. Homemade lavender syrup brings a little summer feeling to everyday life while offering a great alternative to store-bought soft drinks. All you need is a little syrup, chilled sparkling water, lemon, and ice—and your refreshing, floral summer drink is ready.
