Recipe

Vegan doughnut

Zsófi

The vegan doughnut recipe is a healthier alternative to traditional doughnuts, as it is made without dairy products or eggs, making it cholesterol-free,easy to digest and suitable for a plant-based diet as well. The baked version of the Hungarian carnival doughnut is lower in fatwhile still retaining the soft, tender texture characteristic of carnival doughnuts. Natural ingredients such as coconut sugar and almond milk not only make it tastier but also richer in nutrients, making it a perfect choice for health-conscious sweet lovers.

Servings: 5–10 pieces (depending on size)
Difficulty: Easy
Prep Time: 12–15 minutes
Allergens: Vegan, Soy-free, Egg-free, and Lactose-free

Ingredients

250 g whole-wheat spelt flour or oat flour
50 g almond flour (or ground almonds)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons cinnamon (optional)
100 g coconut sugar
200 ml almond milk
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
3 tablespoons melted coconut oil

Instructions

1. Step

Preheat the oven to 180°C and prepare a donut pan (silicone or nonstick). If you don't have a donut pan, use a muffin pan, but place a small ball of aluminum foil in the center of each cup to create the hole.

2. Step

In a large bowl, mix the flours, baking powder, baking soda, salt, and cinnamon (if using). Add the coconut sugar. In another bowl, mix the almond milk and apple cider vinegar. Let it rest for 5 minutes, then add the vanilla extract and melted coconut oil.

3. Step

Pour the wet ingredients into the dry ingredients and mix thoroughly, but do not overmix the batter. You should have a smooth, thick, but spoonable consistency. Spoon the batter into the donut molds, filling them about three-quarters full. Bake the donuts for 12–15 minutes, or until golden brown and springy.

4. Step

Remove them from the pan and let them cool completely on a wire rack. Melt 50 g of vegan dark chocolate with 1 teaspoon of coconut oil. Dip the tops of the donuts into it and sprinkle with chopped walnuts, almonds, or shredded coconut.
