Homemade granola is not only delicious but also extremely nutritious. Rolled oats are rich in fiber, especially beta-glucan, which helps maintain healthy cholesterol levels and supports cardiovascular health. Additionally, nuts and seeds contain valuable antioxidants, such as vitamin E and zinc. The natural sweetness of the granola comes from honey or maple syrup, so there is no need for added sugar. Coconut oil is not just tasty, but it also contains medium-chain fatty acids, which are quickly converted into energy. Furthermore, rolled oats contain B vitamins, which support metabolism and the maintenance of energy levels, making granola a perfect choice at any time of the day.

Preparation
Step 1
Preheat the oven to 160°C (320°F) and line a large baking sheet with parchment paper.
In a large bowl, mix together the rolled oats, coarsely chopped nuts or seeds, shredded coconut, cinnamon, and salt.
Step 2
In a smaller bowl, whisk together the melted coconut oil, honey or maple syrup, and vanilla extract. Pour the wet ingredients over the dry ingredients and mix thoroughly so that all the dry ingredients are well coated with the wet mixture.
Step 3
Spread the mixture evenly onto the baking sheet and bake for 25-30 minutes until golden brown and crispy. Stir the granola every 10-15 minutes during baking to ensure even browning.
Remove from the oven and let it cool completely in the pan. Once cooled, stir in any dried fruit if you are using any. Store in an airtight jar or container to keep it crunchy for a long time.
All done! :)
