Instructions

Homemade lavender syrup is a true summer specialty: a delicately floral, fresh, and elegant drink that you can turn into a refreshing lemonade in moments by serving it with soda water, lemon slices, and plenty of ice. If you love natural flavors and enjoy making simple, seasonal treats at home, this lavender syrup recipe is a great choice for warmer days.

Due to lavender's distinctive aroma, it is worth using it sparingly: a little is enough to achieve a pleasant, fragrant syrup. The recipe can be made with traditional sugar, but you can also try a sugar-free version with erythritol or another sweetener suitable for cooking.

Ingredients

For approx. 7–8 dl of syrup:

  • 2 tablespoons dried, culinary-grade lavender flowers
  • 5 dl water
  • 400 g sugar or an equivalent amount of sweetener
  • juice of 1 organic lemon
  • 3–4 slices of organic lemon
  • 1 teaspoon citric acid, optional
  • a few fresh mint leaves for serving, optional

Preparation:

  1. Bring the water to a boil, then remove from heat. Add the dried lavender flowers and lemon slices.
  2. Cover and let it steep for 15–20 minutes. It is not recommended to soak it longer, as the flavor of the lavender can become too intense and slightly perfume-like.
  3. Strain the fragrant lavender infusion through a fine mesh strainer or cheesecloth.
  4. Pour the liquid back into a saucepan, add the sugar or sweetener, and heat over low heat until completely dissolved.
  5. Stir in the freshly squeezed lemon juice and citric acid, and simmer for 2–3 minutes.
  6. Pour into clean, sterilized bottles, seal, and let cool.

Serving suggestion

Place ice in a large glass, pour 2–3 tablespoons of lavender syrup over it, and dilute with cold water or soda water. Add a lemon slice, a mint leaf, or perhaps a few blueberries or raspberries—this will make it not only delicious but also a truly beautiful summer drink.

Sugar-free version

If you want to make sugar-free lavender syrup, use a sweetener that is heat-resistant and dissolves well in drinks. It is important to note that sugar not only sweetens but also acts as a preservative, so the sugar-free version should be stored in the refrigerator and consumed within a few days.

Tip

The flavor of the lavender syrup will be truly harmonious if you don't consume it too concentrated. Start with a smaller amount and add more to taste. It can be used for lemonade, iced tea, non-alcoholic cocktails, and is also great for flavoring desserts—such as panna cotta, ice cream, or fruit salad.

Storage

Traditional syrup made with sugar can be stored in a clean, sealed bottle in a cool place for several weeks. Once opened, be sure to keep it in the refrigerator and consume within a short time.

Why we love it

Because it's simple, fragrant, special, and easily versatile. Homemade lavender syrup brings a touch of summer mood into everyday life, while being a great alternative to store-bought soft drinks. You only need a little syrup, cold soda water, lemon, and ice—and your refreshing, floral summer drink is ready.
