1. Step
Preheat the oven to 180°C and line a medium-sized baking tray with parchment paper. Peel the 4 medium apples, then grate them using a coarse grater. If they release a lot of juice, gently squeeze out some of the excess moisture, but do not remove it all so the cake remains moist.
In a large bowl, mix the eggs, coconut sugar, melted coconut oil, and vanilla extract. Add the coconut milk and stir until smooth.
2. Step
In another bowl, mix the gluten-free oat flour, coconut flour, baking powder, cinnamon, and a pinch of salt. Gradually add the mixture to the wet ingredients and stir to form a smooth batter.
Fold the grated apples into the batter and mix well. Pour the batter into the prepared baking tray and smooth the top.
3. Step
Peel the extra apple and cut it into thin slices. Arrange the apple slices closely together on top of the cake. You can also sprinkle a little cinnamon coconut sugar over them so they caramelize during baking.
Bake in the preheated oven for 30–35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean. The apple slices should also be golden brown.
Cooling and serving: Let the cake cool in the tray for 10–15 minutes, then cut it into slices. It is delicious both warm and cold!
