Ingredients

500 g fresh or frozen strawberries
2–3 tablespoons chia seeds
1–2 tablespoons erythritol or stevia
1 teaspoon freshly squeezed lemon juice

Instructions

Step 1

Place the strawberries in a small saucepan and cook over medium heat until they release their juices and soften (about 8–10 minutes).

Step 2

Mash them with a fork or potato masher. Add the chia seeds and lemon juice. You can sweeten it with erythritol or stevia.

Step 3

Mix well and let it stand for 20–30 minutes so the chia seeds can thicken the jam. Transfer to a clean, airtight jar and store in the refrigerator. (It will keep for 5–7 days when stored airtight in the refrigerator.)
