1. Step
Preparing the figs: Wash the figs thoroughly, then remove their stems. Cut the figs into smaller pieces (quarters or smaller slices).
Cooking: Place the chopped figs in a large pot. Add the lemon juice and grated zest, as well as the water. Start cooking the mixture over medium heat.
2. Step
Slow cooking: When the figs begin to release their juice, reduce the heat and let them simmer for 30–40 minutes. Stir occasionally to prevent them from burning. The figs will soften nicely and take on a thick, jam-like consistency.
Puréeing (optional): If you want a smoother jam, you can use an immersion blender to purée the mixture. If you prefer a chunkier jam, leave it as it is.
3. Step
Adding vanilla (optional): If using vanilla, add the vanilla extract and mix well.
Preserving: If you want to keep the jam for a longer period, pour it while still hot into sterilized jars and seal them tightly. Turn the jars upside down for 5 minutes to create a vacuum, then turn them upright again and let them cool.
Storage: Store the jam in a cool, dark place. Refrigerate after opening.
