Difficulty: Easy
Prep Time: 18–20 minutes
Allergens: Gluten-free

Ingredients

125g dark chocolate
50g coconut oil
3 eggs
100-175g coconut blossom sugar (to taste)
90g almond flour
30g cocoa powder
a pinch of salt
dark chocolate chips

Instructions

1. Step

Preheat the oven to 180 ºC and line a (20x20 cm) baking pan with parchment paper. In a heatproof bowl set over a saucepan of hot water, melt the dark chocolate and coconut oil together. Set aside.

2. Step

Beat the eggs and coconut sugar until pale, fluffy, and tripled in volume. This will take approximately 5–7 minutes. Slowly drizzle in the melted chocolate while mixing with a whisk at low speed. Continue mixing until the chocolate is fully incorporated. Sift the almond flour, cocoa powder, and salt into the egg-and-chocolate mixture, then gently fold in the dry ingredients with a spatula until no lumps remain.

3. Step

Stir most of the chocolate chunks and shavings into the brownie batter, then pour the batter into the prepared baking pan. Smooth the top and sprinkle with the remaining chocolate chunks and shavings. Bake in the preheated oven at 180 ºC for 18–20 minutes, or until a toothpick inserted in the center comes out with moist crumbs for fudgy brownies, or with a little partially baked batter for gooey brownies.

4. Step

Serve the brownies warm or cooled. The healthy brownies will keep for 3–4 days in an airtight container in a cool, dry place.
