Ingredients

2 1/2 cups gluten-free oat flour
1/2 cup warm almond milk
2 tablespoons coconut oil
2 tablespoons coconut sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon baking soda
3 tablespoons coconut sugar
2 teaspoons ground cinnamon
2 tablespoons melted coconut oil

Preparation

1. Preparing the dough:
In a bowl, mix together the oat flour, baking powder, baking soda, salt, and vanilla extract. Add the coconut oil, almond milk, and coconut blossom sugar. Knead the dough until it becomes soft and easy to shape. If necessary, add a little more almond milk or flour.

2. Preparing the filling:
Mix the coconut blossom sugar and cinnamon. Set aside the melted coconut oil for brushing.

3. Shaping the dough:
Roll out the dough on a floured surface into a rectangle. Brush it with the melted coconut oil, then sprinkle the cinnamon-sugar mixture evenly over it.

4. Shaping the rolls:
Roll up the dough tightly and cut it into evenly sized slices. Place them on a baking tray lined with parchment paper.

5. Baking:
Bake the rolls in a preheated oven at 180°C for about 15–20 minutes, or until golden brown.
