Coconut roll

Ingredients

300 g ground biscuits (gluten- and lactose-free)
100 g coconut sugar
3 tablespoons cocoa powder
1 pinch of salt
2 tablespoons coconut oil
150 ml coconut milk
1 tablespoon rum flavoring (optional)
50 g coconut flour
2 tablespoons coconut sugar
1 teaspoon vanilla extract

Instructions

1. Step

Grind the biscuits to a fine texture, then mix the ground biscuits, coconut blossom sugar, cocoa powder, and salt in a large bowl. Add the coconut oil and coconut milk, then knead until you have a well-shapable mixture. If necessary, add a little more coconut milk.

2. Step

In another bowl, mix the coconut cream, coconut flour, coconut blossom sugar, and vanilla extract. Work the mixture until it reaches a spreadable, homogeneous consistency.

3. Step

Roll out the dough on baking paper into a rectangle about half a centimeter thick. Spread the coconut filling evenly over it, then carefully roll it up using the baking paper.

4. Step

Wrap the roll in plastic wrap and refrigerate for at least 2–3 hours to firm up. 

Serving: Slice the completely chilled and firm roll, and sprinkle with a little shredded coconut if desired.
