Ingredients

2 cups oat flour
1/2 cup coconut flour
1/2 cup coconut oil
1/3 cup maple syrup
1 egg
pinch of salt

Instructions

1. Step

Preheat the oven to 180 degrees. Prepare Linzer cookie cutters or use a round cookie cutter. To make the dough, mix the oat flour, coconut flour, and salt in a bowl.

2. Step

Combine the lactose-free butter (or coconut oil) with the honey, egg, and vanilla. Mix the wet and dry ingredients, then form a dough. Cover the dough and let it rest for at least 30 minutes.

3. Step

Roll out the dough on a floured surface, then cut out pairs of cookies. Cut shapes (circles or hearts) from the centers of the top cookie pieces. Place the cut-out dough on a baking sheet and bake for about 10–12 minutes, or until golden brown.

4. Step

Let the cookies cool, then spread strawberry jam on the tops of the bottom cookies and place the cut-out cookie pieces on top. If desired, sprinkle the Linzer cookies with powdered erythritol!
