Detailed product description

Delicious, versatile, wheat-free noodles with a rich, nutty buckwheat flavor. Known in Japanese as "Juwari Soba," which means 100% soba.
Since buckwheat contains no gluten or binding agents, it takes great skill and time to prepare this hearty, popular noodle. The grain is milled multiple times, giving the noodles, despite being whole grain, a fine, soft texture that absorbs the flavor of the broth or dressing served with them.
Soba noodles are often served in Japan after large parties or at the end of a night of drinking. They are also traditionally served on January 1st to celebrate the start of the New Year, as the long noodle strands symbolize longevity, as well as the strength and resilience characteristic of the buckwheat plant.
Soba cooks quickly (in just over five minutes), but because of the lack of gluten, it is quite fragile and requires gentle handling. Originally served chilled with a dipping sauce, today it is more commonly served as a noodle soup in hot broth, garnished with colorful and nutritious vegetables, seaweed, and sesame seeds.
