6% acidity. Contains no alcohol. Contains no preservatives, so harmless vinegar sediment may form over time. Clearspring Organic Balsamic Vinegar is produced by the Mengazzoli family in Modena using centuries-old traditional methods.
During this process, the finest organic Trebbiano grapes are meticulously selected on the vine, the juice is gently cooked to concentrate its essence, blended with the finest wine vinegar, and the resulting mixture is aged in wooden barrels.
There is a friendly rivalry between different producers in selecting the woods used to perfect the balsamic vinegar aging method. Some prefer cherry, mulberry, chestnut, or juniper, but the Mengazzolis prefer the delicate aromas of durmast oak and larch.
Caramel appears on the ingredient list of many balsamic vinegars, but it is absent from Clearspring's vinegar. It is used as a cheap and quick method to increase the sweetness, color, and density of the vinegar, which Clearspring balsamic vinegar achieves through natural aging.
Use Clearspring Organic Balsamic Vinegar with its complex sweet and sour flavor to add depth to dressings, dips, sauces, and marinades.
Usage: Salads, vegetables, dips, dressings, and marinades. For a wonderful Mediterranean salad dressing, mix with Clearspring Traditional Sea Salt and Italian extra virgin olive oil.
