Ingredients: wheat gluten

Wheat gluten is an elastic substance capable of swelling, which makes it possible to bake beautiful, tall loaves from wheat flour. Properly seasoned, wheat gluten can also be used to make wheat meat (seitan). When breaded or fried, it produces a topping with a texture and taste similar to meat.

Use: to improve low-gluten flours (e.g. for bread making) and to prepare seitan.
