Black rice is a short-grain rice variety with high fiber content. Black rice is black due to its high anthocyanin content, the same antioxidant responsible for the color of beetroot or red cabbage. Its flavor makes it suitable for preparing both savory and sweet dishes. Before cooking, the grains are black, but they turn dark purple once boiled.
