Detailed product description
The sugar cane from which cane sugar is made grows in tropical and subtropical regions. Interestingly, only the plant's stalks are cut during harvesting; they are not pulled out of the ground, allowing the plant to grow again without needing to be replanted—in other words, it is a renewable source of sugar. This not only makes cane sugar production economical but is also beneficial from an environmental perspective.
Cane sugar is obtained from the sap found in the plant's fleshy stalks, and no additives are used during processing. During the process, the fine crystalline sugar and molasses separate (this by-product is later used to produce rum), but some of the color compounds remain enclosed in the sugar crystals, giving the sugar its distinctive, pleasant color. The more color compounds remain in the sugar, the more distinctive its taste and aroma.
The special feature of soft dark brown cane sugar is that, thanks to gentle processing, considerably more molasses than average remains in the finished product, giving it its dark color and caramel-like aroma.
Chemically, cane sugar is also sucrose (a carbohydrate consisting of two sugar molecules), just like beet sugar, so it is not recommended for people who need to monitor their sugar intake. However, as it is natural and free from impurities and artificial colorings, it is a better choice for everyone else.
It can be used similarly to beet sugar in food and drinks, for baking, cooking, or cold dishes. Its more distinctive yet milder taste and aroma give dishes a special flavor. It is particularly worth replacing beet sugar with cane sugar in dishes where the flavor of the sugar plays an important role (e.g. meringue, meringue cream, caramel).
Use in the same way as granulated sugar.
