Detailed product description
A pseudocereal originating in South America, known and cultivated thousands of years ago, whose outstanding nutritional properties were only recognized around 40 years ago.
Amaranth is gluten-free, so people with gluten sensitivity can also consume it safely.
Importance and effects: Amaranth has a lower carbohydrate content and a higher protein and fat content than most grains and pseudocereals. Its protein composition is favorable; among the essential amino acids, it contains a high amount of lysine, which makes it distinctive and beneficial compared with other grains. Polyunsaturated fatty acids predominate among its fatty acids.
It is high in fiber, which aids digestion, slows the blood sugar-raising effect of carbohydrates, and can also have a beneficial effect in cases of constipation.
Amaranth has an exceptionally high iron content compared with grains. Its calcium, magnesium, and zinc content is also noteworthy.
A less favorable characteristic is that amaranth contains certain so-called antinutritional compounds that inhibit the digestion and utilization of some valuable nutrients. Examples include oxalic acid and phytic acid, which hinder the absorption of calcium and phosphorus.
Uses: It can be mixed into muesli or used to make cakes, biscuits, and energy bars. It can also be used for breading and preparing fillings.
