Nutritional yeast flakes are made from the yeast fungus Saccharomyces cerevisiae, which is rendered inactive through heat treatment and drying. Therefore, nutritional yeast flakes are not suitable for leavening, but due to their high protein, vitamin, and mineral content, they are worth incorporating into your diet.
Significance and effects: Protein accounts for nearly half of the energy content of nutritional yeast flakes. It is high-quality protein containing all nine essential amino acids. They contain a small amount of fat and even less sugar. They are particularly rich in B vitamins, especially vitamin B12, and among the minerals, their zinc and selenium content is noteworthy.
Uses: Nutritional yeast flakes are primarily used for seasoning. Naturally, without any added seasoning, they have a flavor somewhat reminiscent of Parmesan cheese, making them widely suitable for preparing and enhancing pasta dishes, soups, pastries, homemade breads and baked goods, biscuits, and salads. Mixed with cold-pressed oil and spices, they make a delicious cream that can be served with toast.
