Red lentils possess all the positive attributes of lentils; however, as the hard-to-digest hull is removed during dehulling, their fiber content is lower than that of brown or green lentils. Their best quality is that they do not require soaking before cooking and they cook much faster than other legumes. This is sure to win the heart of any homemaker.
